Culinary Taste Tip: Pears taste the best when they are perfectly ripened and are at room temperature. To ripen them faster, place two or more in a paper bag. They're ripe when the flesh is slightly soft to the touch and they are fragrant.
Culinary Technique Tip: If pomegranate glaze is not available, you can make your own! Simply simmer one cup of pomegranate juice until it reduces to two tablespoons of thick glaze.
Sweet Roasted Pears with Pomegranate Syrup Drizzle
Preparation time: 10 minutes
Cooking time: 20 minutes
Servings: 4
Calories: 193 per serving (10% from fat)
Ingredients:
2 large ripe pears, preferably red skinned
¼ cup unsweetened unfiltered organic apple juice or cider
½ cup granola cereal without raisins, preferably organic
2 tablespoons dark honey, divided
2 tablespoons pomegranate glaze or syrup*
½ cup vanilla soy ice cream, such as Soy Delicious brand
Dark chocolate covered ginger, chopped, such as Trader Joe's (optional)
Preparation:
Heat oven to 400° F. Cut pears in half lengthwise. Use a melon baller or measuring teaspoon to scoop out core and seeds. Place pears, cut sides down in a shallow baking dish. Pour apple juice over pears. Bake uncovered 15 minutes.
Combine granola and 1 tablespoon of the honey. Turn pears over and spoon granola mixture into hollows of pears. Return to oven and bake until pears are tender, about 6 minutes. Use a large spoon to transfer pear halves to serving plates and let stand 5 minutes. (Juices from dish should have evaporated.) Combine pomegranate glaze and remaining 1 tablespoon honey. Mound 2 tablespoons soy ice cream over each pear half and drizzle pomegranate-honey mixture attractively over plates. Garnish with chocolate covered ginger if desired.
Substitutions:
Low fat vanilla frozen yogurt may replace the soy ice cream if preferred and pear juice may replace the apple juice.
*Tip: Look for pomegranate glaze at Trader Joe's or in specialty grocery stores.
